Our history began as an eel wholesaler in 1932. What has been passed down from generation to generation is the passion of the producers behind the ingredients, and the ideals of the artisans who handle them. We have a deep understanding of both and the ability to give shape to them.
We started with eel and have since expanded our offerings to include Wagyu beef, tuna, charcoal, wild game, and fresh produce, but we are not simply increasing the number of items we offer. We personally visit each and every production site and hold face-to-face discussions. We will continue to work until we fully understand the "particulars" of the producers.
Only ingredients that share the passion we have identified can be used as ingredients at Nakasho Shoten.
"I want more of these ingredients." We listen to the voices of our artisans on the shop floor and work hard to make their dreams come true. We continue to deliver the "real thing" with confidence. This is the unchanging attitude of Nakasho Shoten.

The core of our history is our discerning eye for high-quality ingredients and our ability to source them through a unique network of trust. Our ability to discern the individual differences in ingredients and select only the finest products that live up to the Nakasho Shoten name is our unwavering foundation.
However, we do more than just stock "good things." We listen to the detailed requests of each craftsman and have honed our "handling" (processing) skills to give shape to the ideal material. Rather than simply purchasing and selling, we "handle" the materials to the shape that the craftsmen on-site desire, thereby bringing out the full potential of the materials. We will continue to pursue both these two wheels of "selection skills" and "response skills."
