Our strong network of direct connections with domestic and international producers allows us to purchase large quantities of live eels throughout the year. "Tateba" (Stand) to Maintain Freshness
At our in-house "Tachiba," we use abundant natural well water to thoroughly remove mud and odor from the eels. By exposing them to the pure water, we are able to bring out the natural flavor of the eels and serve them to our customers in the freshest possible state.

The butchering techniques that have been honed since the restaurant's founding are there to meet the "particularities" of each and every customer. The butchering method, size, thickness of the meat... We discern the individual differences in each eel, which are not easy to handle, and flexibly respond to detailed orders on-site. The techniques of our craftsmen, who have handled an overwhelming number of cases, are the weapons that support the food industry.

Nakasho Shoten's energy business division was established in 2019.
In Japan's charcoal sales industry, most businesses are small, family-run businesses, and issues with quality, price, and opaque distribution routes have been issues. We have broken this status quo by building a direct distribution network that does not go through trading companies, and are establishing a new standard in the charcoal industry.

We have signed direct contracts with producers in countries of origin such as Laos and Vietnam. Our production staff visit the local areas and build strong relationships of trust with producers. This allows us to stably purchase high-quality sawdust charcoal and binchotan charcoal, which burn well and are less likely to explode, at fair prices without middleman margins.
